Burgers

Ingredients / 4 port

2 tbsp ghee

400 g minced beef brisket

1 big onion

1 medium carrot

15 cm leek, chopped & the white part only

6 garlic cloves


4 egg yolks

1 tbsp oregano, dry

1 tbsp thyme, dry

1 tsp cumin

4 tbsp fresh parsley, chopped

Celtic salt and freshly ground pepper

Method
  • Put the onion, carrot, leek and garlic into a food processor and beat until tiny pieces.

  • In a medium pot, add the vegetables, ghee and a few tbsp water, bring to a boil and then simmer under low heat until the water evaporates and the veggies start to sautéing with the ghee. Continue the process for a few minutes so the veggies can get caramelized somehow.

  • Mix the minced beef, egg yolks, and spices in a large bowl. Season with salt and pepper.

  • Add the caramelized veggies and parsley and mix well. Correct the seasoning

  • Divide the mixture into eight pieces and create your burgers.

  • Heat the pan with little ghee and olive oil and fry for a minute on each side.

  • Place them into a baking tray and finish them at 120° C oven for another 15 minutes if you prefer the meat medium.

  • Meanwhile, slice the bread, prepare the salad, tomato and onion with the dressing you prefer and make the montage after the burgers are ready.

  • Serve and enjoy!


Tips
  • Eight small burgers or four big, its up to you!

  • The meat here has a compact form, but the veggies taste gives a character to the final liking.

  • A slice of cheese with some pickled onions and some bacon slices can make the burger even more extraordinary.
